Preparing an Authentic Caribbean Meal at Our Mount Dora, Florida, Apartments

If you want to prepare an authentic and delicious Caribbean meal right at your Veranda apartment home, one of the easiest places to start is with arroz con pollo. Translated simply as “rice with chicken,” some variety of arroz con pollo can be found in the cuisines of Cuba, Puerto Rico, the Dominican Republic, and Jamaica. What makes arroz con pollo so popular and distinct is its unique blend of saffron-infused rice and rich, flavorful Caribbean spices.

To get started making this delectable dish at our Mount Dora, Florida, Apartments just follow these simple steps:

  • First, gather the ingredients. To serve four people, you’ll need the following:

    • 1 chicken (3 ½  to 4 lbs.) cut into 8 pieces

    • A Spanish adobo (seasoning) with pepper

    • 3 tbsp. extra virgin olive oil

    • 1 medium yellow onion, finely chopped

    • ¾ green bell pepper, finely chopped

    • 3 cloves fresh garlic, finely chopped

    • 2 cups of long grain rice

    • 1 packet of powdered chicken bouillon

    • 1 packet of saffron seasoning

    • ½ cup of frozen peas, thawed

  • Once you have the ingredients, you can begin cooking. First, use paper towels to pat the chicken dry. Once the thawed chicken is dry, season it with the adobo to taste. Heat the olive oil in a large pot over medium heat. Cook the chicken in batches, until brown on all sides, and then set aside. This should take 7-10 minutes.

  • Add onions, peppers, and garlic into the pot. Stir and cook those until they’re soft, which should take about 5 minutes. Then, add the rice, powdered bouillon, and the saffron seasoning to the pot. Stir this mixture constantly until the rice is completely coated, which should take about 1-2 minutes of continuous stirring.

  • Add 3 cups of water and bring the combined mix to a boil. Deposit the browned chicken back into the pot, and then cover the pot and reduce the heat to low. Let the mix simmer until the water is absorbed, which will give the rice time to become tender and allow the chicken to cook all the way through. This final step should take about 20-25 minutes.
