Eating Cool Summer Meals in our Mount Dora, Florida, Apartments

One of the wonderful things about living in Florida is being able to enjoy warm weather and sunshine virtually all year long. But there are certainly those days in July and August when the heat is at its most intense and the last thing you want to do is turn on the oven or stand in front of the stove to cook dinner. And while the features and appliances of the kitchens at Veranda Apartment Homes are excellent, there are a variety of meals you can make without ever having to get out a pot or a pan.

Here are a few easy, cook/bake-free meals that you can make during the summer months in our Mount Dora, Florida apartments:

  • The classic sandwich – So maybe white bread and boloney isn’t all that exciting, but remember that there are lots of ways you can get creative with the traditional sandwich. Experiment with different types of bread, like olive bread or foccacia, and add unique toppings, like roasted red peppers, prosciutto, arugula, and aioli.
  • Veggie wraps – Use a flavored wrap, like spinach, tomato, or whole wheat, and roll it up with some hummus, veggie cream cheese, sprouts, green and red pepper slices, cucumber slices, or any other fresh veggies you have lying around.  
  • Gazpacho – Blend cucumber, red pepper, tomatoes, red onion, garlic, tomato juice, olive oil, black pepper, and sea salt until it’s is completely pureed. Serve cold with an ice cube and a drizzle of olive oil or grape seed oil.
  • Ceviche – While traditional Ceviche involves marinating raw fish in citrus juices for several hours, a less time-consuming (and a less raw) option is also available. Buy peeled and ready-to-eat shrimp. Marinate in lime juice for one hour, then season with vinegar, cilantro, red onions, and sea salt.

Of course, when the cooler months come along, you can get right back to cooking in your luxurious Veranda kitchen that features modern GE appliances, like an 18-cubic-foot refrigerator and a glass-top stove, and a spacious pantry.
